Parmesan Baked Catfish - 4 Servings http://www.melbys.net
  • 4 catfish fillets (5 to 6 oz. each)
  • 1/2 cup parmesan cheese, grated
  • 1/2 cup reduced calorie sour cream
  • 1/2 cup reduced calorie mayonnaise
  • 1 shallot, minced
  • 1 tbsp. white wine vinegar
  • 1 tsp dry tarragon leaves, crushed
  • 1/4 tsp salt
  • Paprika
Rinse catfish and pat dry.  Lay fish in single layer on lightly oiled baking sheet or shallow casserole.  In a bowl, combine 1/2 of cheese, the sour cream, mayonnaise, shallot, vinegar, tarragon, and salt.  Spread mixture over fillets.  Bake at 375o degrees for 10 to 12 minutes.  Remove fish from oven.   Turn oven to broil.  Sprinkle fillets with remaining cheese and paprika.  Place 3 to 4 inches from heat under broiler.  Broil for 3 minutes until golden brown
